Duck can be easily prepared and is perfect for special occasions, but the difference between the breast meat and that of the thighs and legs is greater than in chicken or turkey which makes cooking a whole duck problematic. Although we occasionally roast a whole duck, we much prefer to cook the breasts and legs separately, which both simplifies the process and allows proper preparation of both. The breast meat is leaner than that of the legs and thighs and is best seared to medium rare over very high heat, while the rich dark meat of the thigh and leg responds best to slow roasting at low temperature.
We love how Carena uses every part of the duck: The carcass makes a velvety broth for braising the wings and legs until they're fall- off-the-bone tender; the breast is seared and sprinkled with minced parsley and garlic, so the dish really runs the gamut from deeply meaty to fresh and vibrant. Hi, I would be grateful for some advice please. I had a lumpectomy and 20 sessions radiotherapy, no chemo. I did worry about this at the time as everything I read said it is important to get clear margins. When I asked my consultant he said that the tumour was too close to the chest wall to take any more tissue away and that the extra sessions of radiotherapy would be enough.
